Corn is always a popular side dish at my family's Thanksgiving table. Sometimes it's fresh, more often than not, it's canned.

Canned corn, drained, and dumped into a bowl.

Easiest side dish ever.

But surely sauteed with some onions and crispy bacon would make the corn just that much better?

Use fresh corn if you have it, which during Thanksgiving is pretty much out of season. So use frozen or canned if you wish. Or wait until the summer, when the corn is fresh and sweet, and make this dish then.

Corn Sauteed with Bacon and Green Onions

For about 6 to 8 servings as a side dish, you'll need:

1 lb frozen corn or 2 15-oz cans, drained or 4 ears fresh corn, sliced off the cob
1/2 small onion, diced
4 slices bacon, diced
2 scallions, thinly sliced

Defrost or drain or slice off the cob, depending on what type of corn you're using. Set aside.

Dice half of a small onion. Slice 4 pieces of bacon. Thinly slice 2 scallions.

In a pan on medium-high heat, saute the onion and bacon until the bacon starts to crisp. Tilt the pan and soak up excess fat with a paper towel.

Then add the sliced scallions and saute a bit more.

Add in the corn.

Thoroughly mix and you're done.

Plate and serve up for Thanksgiving dinner.

  1. In Hawaii we grow fresh corn all year round; fresh picked corn on the cob 365-days a year!

    You can sauté the corn till slightly caramelized, replace the onion with diced red onion and add a can of drained black beans, chopped cilantro and can of drained Ro-tel diced tomatoes with green chilies and you wind up with black bean corn salsa with bacon.

    I love fresh corn! There is some in the stores now, but they just don't taste as good as the peak of summer. I love roasted corn salsa too. I don't know about adding bacon to it though.
